Ever tried rabbit?

If not, you are missing out. What does it taste like…chicken. No really, think dark meat in flavor, but the texture and visual appearance of white meat. You always use something sweet.


This rabbit was Sous Vide 1.5 hours @ 149, then put in an ice bath. Convention oven was set to 500 on convection roast. Prior to placing in the oven the cooked rabbit was brushed with an olive oil butter mixture. Cooked until browned.


Seasoning: Peach Mango preserves, fresh cracked pepper, garlic and onion powder, Mrs. Dash Seasoning Original.


Sauce: butter was added to the dripping and reduced. White wine to deglaze.

Vacuum sealed overnight.
